A Tyrolean family business with heart – for over 20 years
What began two decades ago as a family passion is today a genuine piece of regional food culture. At our family-run trout farm at the Geroldsmühle, everything revolves around the highest quality, a close bond with nature, and a love of the craft.
Our secret? The crystal-clear mountain water!Our fish grow up under the best and most natural conditions. We draw the crystal-clear, cold water for our 3 rearing tanks and 6 natural ponds directly from the neighbouring Geroldsbach stream. This constant supply of fresh water, together with species-appropriate care, is something you can taste in every bite.
Our range for food lovers: Whether for the grill, the oven, or a hearty snack – with us you get top quality, prepared exactly the way you like it best:
- Our fish: Juicy trout, delicate char and noble salmon trout.
- Your choice: Absolutely freshly caught or aromatically smoked over beechwood.
- Perfectly prepared: Either whole, or already filleted and ready to cook.

🔥 Tuesday is smoking day at the Geroldsmühle!
Every Tuesday we fire up our smokehouse. Our freshly caught trout, char and salmon trout are then gently smoked over real beechwood. This gives them their unmistakable, savoury flavour and beautiful golden-brown colour. Whether warm straight from the oven or as the perfect Tyrolean snack at home – this aroma and taste are a real highlight.
Tip: Since our smoked fish are very popular, it's best to pre-order!

🐐 Animal antics at the Geroldsmühle: more than just fish!
Besides our swimming residents in the cool mountain water, there's plenty more life to discover around our ponds! Over the years, our Geroldsmühle has grown into a true little home for many other animal housemates.
Visitors are often curiously eyed by our two fluffy alpacas, or greeted by the proud honking of our two geese and two turkeys. Around our farm, 20 happy hens, nimble quails and even magnificent pheasants also scratch about. And when it hums quietly around the ponds on warm days, that's our own hard-working bees, which look after blooming meadows and an intact natural environment around the trout farm.
A genuine, lively family business – there's always something going on here, and that's exactly how we like it!
